Chocolate Chip Pumpkin Muffins

3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup pumpkin puree
1/4 cup water
1 1/2 cups all-purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1 tpbs pumpkin pie spice
1 tsp all spice
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp salt
1/2 – 3/4 cups chocolate chips
1 tsp flour
muffin / cupcake paper liners

Preheat the oven to 400 degrees.

In a bowl mix together the sugar, veggie oil, eggs, pumpkin and water. In a large seperate bowl mix together the dry ingredients (flour through salt). Pour the dry mixture into and wet and mix until uniform and there are no lumps. In a small bowl add the chips and 1 tsp flour stirring to coat the chips. This step prevents the chips from sinking to the bottom when the muffins bake- so don’t skip it!! Fold the chips into your batter.

Line a muffin tin with paper liners. Fill each cup 3/4 of the way full. This batter should make 12 regular sized muffins. Put the tin in the oven and make for 20-25 minutes. Mine were done in 20. Pull the muffins out of the pan and let them cool completely before eating. If the muffins have not completely cooled they may stick to the liners when you try to peel them.
