1 lb. turkey sausage cooked and in crumbles
1 cup part skim ricotta cheese
1 cup asiago cheese
2 green onions, thinly sliced
3 tablespoons finely chopped sun-dried tomatoes
4-8 portobello mushroom caps (4 large or 8 medium /small)
2 tablespoons olive oil or olive oil cooking spray
1 cups shredded Italian cheese blend
Preheat oven to 350.
Add sausage, ricotta, asiago, green onions and sundried tomatoes, mix until completed combined. Remove stem from mushrooms and clean out gils with a spoon. Spray the top of the mushroom with olive oil cooking spray or brush with olive oil. Add mushrooms to a baking dish.
Top each mushroom with sausage and cheese mixture. Sprinkle Italian cheese blend on each mushrpom. Pop in the oven for 20 minutes or until mushrooms are cooked through and cheese is golden.
